My take on the delectable Japanese pancakes. They are fluffy, airy and take your brunch from ‘meh” to “whoa”. Hmm… it must be that whipped meringue.

If at first you do succeed…

That’s brilliant!

But if at first you don’t succeed, try, try again. Seriously. It only gets better after the first one is a flop. These pancakes are a little bit tricky to master. No worries though, you can totally do this. It just takes a pinch of patience and some persistence.

Recipe

Japanese Pancakes — a warm recipe to elevate your gatherings!

Makes: 8 pancakes

Yolk mixture:

6 egg yolks

9 tablespoons milk

9 tablespoons flour

Egg white mixture:

egg whites (from 6 eggs)

3 teaspoons lemon juice

2 teaspoons cream of tartar

9 tablespoons sugar

How to make it

In a bowl, mix together what is necessary for the yolk mixture: 6 egg yolks, milk and the flour.

The most important step! In another bowl, whip up your egg whites. Once you reach ‘soft peaks’ add in the sugar a little at a time while continuing to whip. Whip to stiff peaks. Add in the final few ingredients: the lemon juice and cream of tartar. Whip to combine. This step is what makes your pancakes super soft and airy.

Piping bag method: Squeeze out blobs and blobs.

Slowly, fold the egg white mixture into the yolk mixture.

Add the batter into a piping bag.

Take it to the stove.

Grab your pan and turn the knob over to low heat.

Using your piping bag, squeeze out the batter and create a high blob. Wait 10 seconds and add to the high blob you just created. Squeeze out even more batter on top.

Add in a teaspoon of water inside the pan before covering. This will allow the pancakes to steam and cook.

Let the pancakes steam for 4 minutes on each side adding in a teaspoon of water as necessary.

Serve immediately.

Toppings

We served the pancakes with a side of Greek yogurt, fresh strawberries, blueberries, apples and a squirt of good-quality maple syrup.

But, you’re the boss, applesauce. Choose your favorite fruits, add some cashews or almonds on the side. Sweeten it with condensed milk or decorate with some whipped cream on the top. Yum! The toppings are endless.
