Buttery Squash — a warm recipe for the chilly months.
Makes: One big batch
1 medium-sized butternut squash
3 tablespoons brown sugar
1 teaspoon vanilla
1 quart milk
3 tablespoons butter
1 cup cooked Texmati rice
Sprinkle of cinnamon
How to make it
Start with the squash. After rinsing and washing, cut the squash into small cubes. Put into a large pot filled with water and boil until the butternut squash is fork tender. Discard water.
Take it back to the stove.
Bring the pot back to the stove top.
Add in the butter, milk, vanilla, and sugar. Mash the butternut squash. Next, add in the rice. Sprinkle in the cinnamon.
It will be too hot to eat! Be careful, give it a few minutes to cool down and serve immediately.

Toppings are absolutely optional. Personally, I usually opt out of toppings when it comes to this recipe. I prefer to enjoy the flavor of the butternut squash with a hint of cinnamon.
Best choices to top with: sliced bananas, raisins and figs.
